Essie and Katie Pans
Essie Pans (EP) are stainless steel baking sheet pans for full-size ovens, great for cookies, biscuits, pizza, bread, toast, and much more! They have no coatings that can wear off. They cook well, are easy to clean, and stack compactly for storage. With proper care, they should last a lifetime.
Katie Pans (KP) bring the same qualities to countertop/toaster ovens, excellent for toast, bagels, cookies, personal pizzas, and more! Some customers have also found these useful in oven-type air fryers.
Our favorite size is the EP34 pan (so named because you can fit 3 x 4 of typical cookie, etc. on it). For most ovens, two EP34 pans can fit side by side on a single shelf, actually allowing more total cooking area than if a single pan of the larger sizes is used, which will only fit one per oven shelf. And the smaller size is easier to wash. The EP44 medium size works great for frozen pizzas with its more square shape. (The EP44 pans are being discontinued in favor of the larger EP45 pans.) The EP45 large size can make a bunch of cookies or toast at once.
Because they are bare metal, you can use whatever utensils and cleaning devices you wish. To clean, we typically use Scotch-Brite™, just a light scrub after letting the pans sit with water for a few minutes to soften whatever food is on them. Our pans have become more polished over the years due to washings!
The pans may bow or warp temporarily if subjected to a large temperature difference (such as when cooking a frozen pizza), but return to flat when they normalize.
